  • 2 Bramley apples, peeled, cored, and diced
  • 1 cup blackberries
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a rectangular baking tray.

  2. In a medium bowl, mix the flour, baking powder, and cinnamon together.

  3. In a separate large bowl, cream together the butter and sugar until light and fluffy.

  4. Beat in the eggs, one at a time, followed by the vanilla extract.

  5. Gradually add the flour mixture to the wet ingredients, mixing well after each addition.

  6. Fold in the diced apples and blackberries until evenly distributed.

  7. Pour the batter into the prepared baking tray and smooth the top with a spatula.

  8. Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center comes out clean.

  9. Allow the cake to cool in the tray for 10 minutes before transferring to a wire rack to cool completely.

  10. Serve the Bramley & Blackberry Tray Cake on its own or with a dollop of whipped cream or vanilla ice cream.
