Ingredients

  • 4 egg whites
  • 1 cup of granulated sugar
  • 1 tsp of vanilla extract
  • 1 cup of fresh blackberries
  • ¼ cup of sliced almonds

Instructions

  1. Preheat the oven to 325°F (163°C) and line a 9-inch round cake pan with parchment paper.

  2. In a clean mixing bowl, beat the egg whites until stiff peaks form.

  3. Gradually add the sugar, one tablespoon at a time, and continue beating until the mixture is glossy and holds its shape.

  4. Fold in the vanilla extract gently.

  5. Spoon the meringue mixture into the prepared cake pan and smooth the top with a spatula.

  6. Create a well in the center of the meringue and carefully place the blackberries in it.

  7. Sprinkle the sliced almonds over the top of the meringue.

  8. Bake in the preheated oven for 45 minutes or until the meringue is crisp and lightly golden.

  9. Remove from the oven and let cool completely before serving.

  10. Serve slices of the blackberry and almond meringue cake on dessert plates.
