How To Make Chicken Casserole with Red Wine, Ham & Peppers

Ingredients
- 4 chicken breasts, boneless and skinless
- 1 cup red wine
- 1 cup diced cooked ham
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 onion, thinly sliced
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp all-purpose flour
- 1 cup chicken broth
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides. Remove the chicken from the skillet and set aside.

In the same skillet, add the onions, garlic, peppers, and ham. Cook until the vegetables are softened.

Sprinkle the flour over the vegetables and stir to coat. Cook for an additional 2 minutes.

Add the red wine, chicken broth, thyme, oregano, salt, and black pepper to the skillet. Stir well.

Place the chicken breasts in a casserole dish and pour the vegetable mixture over the top.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the sauce is thickened.
