  • 1 cup blackberries
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a small saucepan, melt the butter and brown sugar together over medium heat until bubbly.

  3. Pour the butter and sugar mixture into a greased baking dish.

  4. Arrange the blackberries on top of the butter and sugar mixture.

  5. In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.

  6. In a separate bowl, mix together the milk, vegetable oil, vanilla extract, and egg.

  7. Gradually add the wet ingredients to the dry ingredients and mix until well combined.

  8. Pour the batter over the blackberries in the baking dish.

  9. Bake in the preheated oven for 40 minutes or until a toothpick inserted into the center comes out clean.

  10. Allow the cake to cool for a few minutes before inverting onto a serving plate.
