  • 12 zucchini flowers
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh herbs (such as basil, parsley, or thyme), chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • Vegetable oil, for frying

Instructions

  1. Gently rinse the zucchini flowers and remove the pistil from each flower. Pat dry with paper towels.

  2. In a bowl, mix the ricotta cheese, Parmesan cheese, chopped herbs, salt, and black pepper until well combined.

  3. Carefully spoon the ricotta mixture into each zucchini flower, gently pressing the petals to enclose the filling. Set aside.

  4. In a shallow bowl, whisk together the flour, eggs, and milk until smooth.

  5. Heat vegetable oil in a large skillet over medium heat.

  6. Dip each stuffed zucchini flower in the egg mixture, allowing any excess to drip off, then carefully place it in the hot oil. Fry until golden brown, turning once, for about 2-3 minutes per side.

  7. Remove the fried zucchini flowers from the skillet and drain on paper towels to remove excess oil.

  8. Serve the fried zucchini flowers hot.
