  • 1 cup oats
  • 1 cup all-purpose flour
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 2 eggs
  • 1 tsp vanilla extract
  • 4 plums, sliced

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.

  2. In a medium bowl, mix together the oats, flour, ginger, cinnamon, baking powder, and salt.

  3. In a separate large bowl, whisk together the melted butter, brown sugar, molasses, eggs, and vanilla extract.

  4. Gradually add the dry ingredients to the wet ingredients and mix until well combined.

  5. Pour the batter into the greased baking dish and spread it evenly.

  6. Arrange the sliced plums on top of the batter.

  7. Bake in the preheated oven for 30 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the slice to cool before slicing and serving.
