  • 1 pound mixed fresh or frozen berries (strawberries, blueberries, raspberries)
  • ½ cup water
  • ¼ cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Combine berries, water, and sugar in a large saucepan.

  2. Bring to a boil and then reduce heat and simmer for 5 minutes.

  3. Remove from heat and stir in lemon juice and vanilla extract.

  4. Allow mixture to cool before blending into a smooth puree.

  5. Chill soup in the refrigerator for at least 1 hour before serving.
