How To Make Swedish Pea Soup

Hearty soup made with dried peas, vegetables, and meat.

Serves:

Ingredients

  • 1 1/2 cups dried yellow peas
  • 5 cups water
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 smoked ham hock (or bacon)
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Rinse peas and put them in a pot with water. Bring to a boil and boil for 2 minutes. Remove from heat, cover, and let stand for 1 hour.

  2. Add chopped vegetables, ham hock, bay leaf, salt, and pepper to the pot. Bring to a boil, reduce heat, cover, and simmer for 1 hour or until the peas and vegetables are tender.

  3. Remove ham hock from the pot and remove meat from the bone. Cut meat into small pieces and return to the pot.

  4. Adjust salt and pepper to taste. Serve hot with bread.
