How To Make Mexican Chicken Tortilla Casserole Recipe
A spicy and delicious casserole made with layers of seasoned chicken, vegetables and tortillas.
Serves:
Ingredients
- 1 lb boneless chicken breast, cubed
- 1 tbsp chili powder
- 1 tsp garlic powder
- 1/2 tsp cumin
- Salt and pepper, to taste
- 1 tbsp olive oil
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 onion, chopped
- 1 jalapeño, seeded and chopped
- 1 cup corn kernels
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes, drained
- 12 corn tortillas, quartered
- 2 cups shredded Mexican blend cheese
- 1/4 cup chopped fresh cilantro
Instructions

Preheat the oven to 375°F.

Season the chicken with chili powder, garlic powder, cumin, salt and pepper.

Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until browned, about 5-7 minutes. Remove from skillet and set aside.

Add the bell peppers, onion and jalapeño to the same skillet. Cook for 5 minutes, stirring occasionally.

Add the corn, black beans and diced tomatoes to the skillet. Cook for an additional 5 minutes.

Grease a 9×13 inch baking dish. Add a layer of tortilla quarters to cover the bottom of the dish. Top with a layer of the chicken mixture, then a layer of shredded cheese. Repeat layers, finishing with cheese on top.

Bake for 25-30 minutes, or until cheese is melted and bubbly.

Let cool for a few minutes before topping with chopped cilantro and serving.
