Ingredients
- 1 cup long-grain white rice
- 1 tbsp vegetable oil
- 1/2 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1 cup chicken or vegetable broth
- 1/2 cup tomato sauce
- 1/2 cup frozen peas and carrots
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

Rinse the rice under cold water until the water runs clear. Drain well.

In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Cook until softened and fragrant.

Add the rice to the skillet and cook, stirring constantly, for 2-3 minutes or until the rice starts to turn golden brown.

Stir in the cumin and chili powder until well combined.

Pour in the chicken or vegetable broth and tomato sauce. Stir to combine everything.

Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and let the rice cook for 15-20 minutes, or until the liquid is absorbed and the rice is tender.
