How To Make Spiced Rice & Beans
Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients
- 1 cup basmati rice
- 1 cup canned black beans, drained and rinsed
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp cumin powder
- 1 tsp paprika
- 1/2 tsp chili powder
- 1/2 tsp turmeric powder
- 2 cups vegetable broth
- Salt to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions

Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.

In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is soft and translucent.

Add the cumin powder, paprika, chili powder, and turmeric powder to the pot. Stir well to coat the onions and garlic with the spices.

Add the rinsed black beans to the pot and stir to combine with the spices.

Add the basmati rice to the pot and stir to coat the rice with the spices and beans.

Pour in the vegetable broth and season with salt to taste. Bring to a boil.

Reduce the heat to low, cover the pot, and simmer for about 25 minutes, or until the rice is cooked and the liquid has been absorbed.

Remove from heat and let it sit, covered, for 5 minutes.

Fluff the rice with a fork and garnish with fresh cilantro.

Serve hot with lime wedges on the side.
