Ingredients

  • 1 cup of cooked rice
  • 2 cups of cooked black beans
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 tsp of cumin
  • 1 tsp of chili powder
  • 1/2 tsp of salt
  • 1/2 tsp of pepper
  • 4 large tortillas
  • Optional toppings: shredded cheese, salsa, sour cream, avocado

Instructions

  1. In a large skillet, heat some oil over medium heat. Add the diced onion and bell pepper, and cook until they become softened.

  2. Add the minced garlic, cumin, chili powder, salt, and pepper to the skillet. Stir well to combine the flavors.

  3. Add the cooked rice and black beans to the skillet. Stir everything together until well mixed and heated through.

  4. Warm the tortillas in a separate skillet or in the microwave.

  5. Spoon the black bean and rice mixture onto each tortilla, leaving room at the edges to fold.

  6. Add any desired toppings onto the mixture.

  7. Fold the edges of the tortilla towards the center, then roll it up tightly.

  8. Serve the burritos immediately, or you can wrap them in foil to keep warm.
