Serves:

Ingredients

  • 2 cups cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 block tofu, pressed and cubed
  • 1 avocado, sliced
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat some oil over medium heat. Add the tofu cubes and cook until golden brown and crispy on all sides.

  2. In a small bowl, mix together the soy sauce, lime juice, cumin, chili powder, salt, and pepper. Pour the mixture over the tofu and stir to coat evenly. Cook for another 2-3 minutes.

  3. In a separate bowl, mix together the cooked rice and black beans. Divide the mixture among 4 serving bowls.

  4. Top each bowl with the cooked tofu, sliced avocado, diced red onion, and chopped cilantro.

  5. Serve the rice bowls with additional lime wedges and soy sauce if desired.
