  • 2 cups all-purpose flour
  • 1 cup dashi stock
  • 2 eggs
  • 1 tsp soy sauce
  • 1 tsp salt
  • 1 cup shredded cabbage
  • 1/2 cup chopped green onions
  • 1/2 cup cooked shrimp
  • 1/2 cup cooked squid
  • 1/4 cup bonito flakes
  • Okonomiyaki sauce
  • Mayonnaise
  • Aonori seaweed flakes
  • Pickled ginger

Instructions

  1. In a large bowl, whisk together the flour, dashi stock, eggs, soy sauce, and salt until smooth.

  2. Add the shredded cabbage, chopped green onions, cooked shrimp, cooked squid, and bonito flakes to the batter. Mix well.

  3. Heat a non-stick pan over medium heat and add a little oil.

  4. Pour a quarter of the batter onto the pan and spread it out to form a pancake shape. Cook for 4-5 minutes on each side until golden brown and cooked through.

  5. Repeat with the remaining batter to make 4 okonomiyaki pancakes.

  6. Serve the okonomiyaki with a drizzle of okonomiyaki sauce, a squeeze of mayonnaise, a sprinkle of aonori seaweed flakes, and some pickled ginger.
