Ingredients

  • 1 tbsp butter
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 stalks of celery, diced
  • 2 medium potatoes, peeled and diced
  • 2 cups fish or seafood stock
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup mixed seafood (such as shrimp, scallops, and white fish), chopped
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion, garlic, celery, and potatoes. Sauté for 5 minutes until the vegetables start to soften.

  2. Pour in the fish or seafood stock, whole milk, and heavy cream. Stir in the bay leaf, dried thyme, salt, and black pepper. Bring the mixture to a boil, then reduce heat to low and simmer for 15 minutes until the potatoes are tender.

  3. Add the mixed seafood to the chowder and simmer for an additional 5 minutes until the seafood is cooked through.

  4. Remove the bay leaf from the chowder. Serve hot, garnished with fresh parsley.
