  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons sake (Japanese rice wine)
  • 1 tablespoon mirin (Japanese sweet rice wine)
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 4 green onions, cut into 1-inch pieces
  • 1 tablespoon vegetable oil
  • 4 bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, mix together soy sauce, honey, sake, mirin, garlic, and ginger to make the marinade.

  2. Add the chicken pieces to the marinade and let them marinate for at least 10 minutes.

  3. Preheat the grill or grill pan over medium-high heat.

  4. Thread the marinated chicken pieces onto the soaked bamboo skewers, alternating with green onion pieces.

  5. Brush the grill or grill pan with vegetable oil to prevent sticking.

  6. Grill the chicken skewers for about 4-5 minutes per side, or until the chicken is cooked through and nicely charred.

  7. Serve the chicken yakitori hot with steamed rice or as a party appetizer.
