Ingredients

  • 1 sheet of puff pastry
  • 100g white chocolate
  • 50g crystallised fruit
  • 200ml heavy cream
  • 1 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Roll out the puff pastry sheet and cut it into four equal-sized circles.

  3. Place the pastry circles on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.

  4. In a heatproof bowl, melt the white chocolate in the microwave or over a double boiler.

  5. Chop the crystallised fruit into small pieces and set aside.

  6. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.

  7. Once the pastry circles have cooled, slice them horizontally in half.

  8. Spread a layer of melted white chocolate on the bottom half of each pastry circle.

  9. Sprinkle some chopped crystallised fruit on top of the white chocolate layer.

  10. Pipe or spoon a generous amount of whipped cream on top of the crystallised fruit.

  11. Place the top half of the pastry circle on top of the whipped cream.

  12. Repeat steps 8-11 for the remaining pastry circles.

  13. Dust the finished Mini Paris-Brest with powdered sugar for garnish.

  14. Serve and enjoy!
