How To Make Jollof Rice

Ingredients
- 2 cups long-grain white rice
- 1 onion, diced
- 2 tomatoes, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves of garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1 teaspoon curry powder
- 1 teaspoon thyme
- 1/2 teaspoon chili powder (optional for heat)
- 2 cups chicken or vegetable broth
- 2 tablespoons vegetable oil
- Salt to taste
Instructions

Rinse the rice thoroughly under cold water until the water runs clear. Drain and set aside.

Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the diced onions, tomatoes, red and green bell peppers, and minced garlic. Cook until the vegetables are soft and fragrant.

Stir in the tomato paste, paprika, curry powder, thyme, and chili powder (if using). Cook for an additional 2 minutes, stirring constantly.

Add the rinsed rice to the pot and stir to coat it evenly with the vegetable mixture. Cook for 2-3 minutes, stirring occasionally.

Pour in the chicken or vegetable broth and season with salt to taste. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the rice simmer for about 20-25 minutes, or until the rice is tender and all the liquid has been absorbed.

Remove the pot from the heat and let the rice sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
