How To Make African Jollof Rice
An incredibly flavorful and spicy one-pot rice dish with origins in West Africa.
Serves:
Ingredients
- 2 cups of long-grain rice
- 3 tablespoons of vegetable oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 scotch bonnet pepper, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon of ginger, minced
- 2 teaspoons of smoked paprika
- 1 teaspoon of cumin
- 1 teaspoon of thyme
- 2 cups of canned tomatoes
- 2 cups of chicken or vegetable broth
- Salt and pepper to taste
Instructions

Rinse the rice under cold water and set aside.

Heat the oil in a large pot over medium heat, then add the onions, red bell pepper, scotch bonnet pepper, garlic, and ginger. Sauté until the onions are translucent.

Add the smoked paprika, cumin, thyme, and stir for 1-2 minutes.

Pour the canned tomatoes and broth, then stir to combine the ingredients.

Add the rice and stir gently until it’s coated with the sauce.

Cover the pan and cook on low heat for 20-30 minutes or until the rice is cooked.

Season with salt and pepper (if needed), and serve hot.
