How To Make The Capital Grille’s Filet Mignon Recipe

Tender and succulent filet mignon seasoned to perfection and served with a side of roasted vegetables.

Ingredients

  • 4 (8 oz) filet mignon steaks
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 2 cloves garlic, minced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions

  1. Preheat the oven to 400°F.

  2. Rub the steaks with olive oil and season with kosher salt and freshly ground black pepper.

  3. Heat a large cast-iron skillet over high heat.

  4. Once the skillet is hot, add the steaks and sear for 2-3 minutes on each side until browned.

  5. Add minced garlic, rosemary, and thyme to the skillet and transfer to the oven.

  6. Roast for 10-12 minutes for medium-rare or until the internal temperature of the steak reaches 135°F on a meat thermometer.

  7. Let the steaks rest for 5 minutes before serving with your choice of roasted vegetables.
