How To Make The Capital Grille’s Dry-Aged Steak Recipe

Juicy and succulent dry-aged steak cooked to perfection.

Ingredients

  • 4 12oz boneless dry-aged sirloin steaks
  • 1 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 2 tbsp canola oil
  • 4 sprigs of fresh thyme
  • 4 tbsp unsalted butter

Instructions

  1. Remove the steaks from the fridge and let them come to room temperature for about 30 minutes. Season both sides with salt and black pepper.

  2. Preheat the oven to 400°F.

  3. Heat the canola oil in a large oven-proof skillet over high heat.

  4. Add the seasoned steak to the skillet and sear on both sides for 2 minutes each.

  5. Add the fresh thyme and butter to the skillet and let the butter melt.

  6. Transfer the skillet to the oven and roast the steaks for 5-8 minutes for medium-rare doneness.

  7. Remove from the oven and let the steaks rest for 5-10 minutes before slicing and serving.
