How To Make Spago’s Tiramisu Recipe

A classic Italian dessert with layers of coffee-soaked ladyfingers and creamy mascarpone.

Ingredients

  • 3/4 cup brewed espresso, cooled
  • 3 tbsp dark rum
  • 12 ladyfingers
  • 2 egg yolks
  • 1/4 cup granulated sugar
  • 1/2 cup mascarpone cheese
  • 1/4 cup heavy whipping cream
  • Cocoa powder for dusting

Instructions

  1. Combine espresso and rum in a shallow dish. Dip each ladyfinger into mixture, turning once to coat both sides.

  2. Arrange ladyfingers in a single layer in the bottom of a 8×8 inch dish, breaking them as needed to fit.

  3. In a medium bowl, whisk together egg yolks and sugar until pale yellow and thick. Mix in mascarpone cheese until smooth.

  4. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the mascarpone mixture.

  5. Spoon half of the mascarpone mixture over the ladyfingers. Repeat with a second layer of ladyfingers and remaining mascarpone mixture.

  6. Cover and chill in the refrigerator for at least 4 hours, or overnight.

  7. Before serving, dust the top with cocoa powder.
