How To Make Ron’s Eggplant Parmesan Recipe

A classic Italian dish made with breaded eggplant slices, tomato sauce, and melted cheese, all baked to perfection.

  • 2 large eggplants, sliced into 1/2 inch rounds
  • 1 cup Italian seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • Salt and pepper
  • 1/4 cup vegetable oil
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese


  1. Preheat the oven to 375°F.

  2. Season the eggplant slices with salt and pepper and allow to sit for 10 minutes.

  3. Mix the breadcrumbs and grated Parmesan cheese together in a shallow bowl.

  4. Whisk the eggs in another shallow bowl.

  5. Place the flour in a third shallow bowl.

  6. Coat each eggplant slice in flour, then dip in the egg mixture, and finally coat with the breadcrumb mixture.

  7. Heat the vegetable oil in a large skillet over medium-high heat.

  8. Fry the eggplant slices until golden brown on both sides (about 2-3 minutes per side).

  9. Place the fried eggplant slices in a large baking dish.

  10. Spoon marinara sauce over each slice of fried eggplant.

  11. Top each slice with shredded mozzarella cheese.

  12. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
