How To Make Ron’s Eggplant Parmesan Recipe
A classic Italian dish made with breaded eggplant slices, tomato sauce, and melted cheese, all baked to perfection.

Ingredients
- 2 large eggplants, sliced into 1/2 inch rounds
- 1 cup Italian seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- Salt and pepper
- 1/4 cup vegetable oil
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
Instructions

Preheat the oven to 375°F.

Season the eggplant slices with salt and pepper and allow to sit for 10 minutes.

Mix the breadcrumbs and grated Parmesan cheese together in a shallow bowl.

Whisk the eggs in another shallow bowl.

Place the flour in a third shallow bowl.

Coat each eggplant slice in flour, then dip in the egg mixture, and finally coat with the breadcrumb mixture.

Heat the vegetable oil in a large skillet over medium-high heat.

Fry the eggplant slices until golden brown on both sides (about 2-3 minutes per side).

Place the fried eggplant slices in a large baking dish.

Spoon marinara sauce over each slice of fried eggplant.
