Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup flour
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 tbsp butter
  • 1/2 cup chicken broth
  • 1/4 cup white wine
  • 2 tbsp lemon juice
  • 2 tbsp capers
  • 1/4 cup chopped fresh parsley

Instructions

  1. Pound the chicken breasts to an even thickness with a meat mallet.

  2. In a shallow bowl, mix the flour, basil, oregano, salt, and pepper.

  3. Dredge the chicken in the flour mixture.

  4. Heat 2 tbsp of butter in a large skillet over medium-high heat.

  5. Add the chicken and cook for about 4-5 minutes per side, until golden brown and cooked through.

  6. Remove the chicken from the skillet and set aside.

  7. Add the chicken broth, white wine, lemon juice, capers, and remaining 2 tbsp of butter to the skillet.

  8. Stir and cook for about 2-3 minutes to thicken the sauce.

  9. Add the chicken back to the skillet and spoon the sauce over the chicken.

  10. Sprinkle with fresh parsley and serve.
