How To Make Giordano’s Tomato Basil Soup Recipe

Ingredients

  • 2 tbsp butter
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 4 cups diced tomatoes
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1/4 cup chopped fresh basil
  • Salt and pepper, to taste

Instructions

  1. In a large pot, melt butter over medium heat.

  2. Add onion and garlic and cook until softened, about 5 minutes.

  3. Add tomatoes and broth, bring to a boil, then reduce heat and simmer for 30 minutes.

  4. Remove from heat and blend soup with an immersion blender or transfer to a blender and blend until smooth.

  5. Return soup to the pot, stir in cream, basil, salt, and pepper.

  6. Simmer for another 5-10 minutes until heated through.

  7. Serve hot with crusty bread.
