A crunchy and nutty toffee candy loaded with almonds and coated in chocolate.

Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 tsp salt
  • 2 tbsp water
  • 1 tsp vanilla extract
  • 1 1/2 cups finely chopped roasted almonds, divided
  • 1/2 package dark chocolate candy coating

Instructions

  1. Preheat oven to 350°F.

  2. In a large saucepan, melt butter over medium heat.

  3. Add sugar, salt, and water to the pan, stirring occasionally until it reaches 300°F on a candy thermometer (about 20-25 minutes).

  4. Remove from heat and stir in 1 cup of finely chopped almonds and vanilla extract.

  5. Pour mixture onto a parchment-lined sheet tray and spread until it is about 1/4 inch thick.

  6. Melt the dark chocolate candy coating according to its package instructions, then spread over the toffee.

  7. Sprinkle the remaining chopped almonds over the chocolate.

  8. Let cool completely, then break into bite-sized pieces.
