Ingredients

  • 1lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1/2 cup frozen peas
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 1 (9-inch) unbaked pie crust

Instructions

  1. Preheat oven to 400°F.

  2. Season chicken with salt and pepper and set aside.

  3. In a large pot, melt butter over medium heat.

  4. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.

  5. Add chicken to the pot and cook until browned on all sides.

  6. Stir in flour and cook for 2-3 minutes.

  7. Whisk in chicken broth and heavy cream, stirring constantly until smooth.

  8. Add frozen peas, thyme, and garlic powder.

  9. Bring mixture to a simmer and cook until thickened, about 10 minutes.

  10. Pour filling into a 9-inch pie dish.

  11. Roll out the pie crust and place on top of the filling, crimping the edges to seal.

  12. Cut a few slits in the top of the crust to allow steam to escape.

  13. Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.

  14. Let cool for a few minutes before serving.
