Ingredients

  • 2 refrigerated pie crusts
  • 5 cups pitted cherries
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 2 tbsp unsalted butter, cut into small pieces
  • 1 egg, beaten
  • Optional: whipped cream or vanilla ice cream for serving

Instructions

  1. Preheat oven to 375°F.

  2. Roll out one pie crust and place it into a 9-inch pie dish.

  3. In a large bowl, mix cherries, sugar, cornstarch, salt, and lemon juice until well combined.

  4. Pour the filling into the crust and dot with butter pieces.

  5. Roll out the second pie crust and use a knife or pastry cutter to cut it into 1/2 inch strips. Arrange the strips into a lattice pattern over the filling.

  6. Brush the lattice with beaten egg.

  7. Bake the pie for 50-60 minutes, until the crust is golden brown and the filling is bubbly.

  8. Allow the pie to cool for at least 1 hour before serving. Serve with whipped cream or vanilla ice cream, if desired.
