Ingredients

  • 2 chicken breasts, diced
  • 1 tsp olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 can of black beans, drained and rinsed
  • 1 can of diced tomatoes
  • 1 cup of corn kernels
  • 1 packet of taco seasoning
  • 1 cup of shredded cheddar cheese
  • 1 cup of tortilla chips, crushed
  • Optional toppings: sour cream, diced avocado, chopped cilantro

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced chicken and cook until no longer pink.

  2. Add diced onion and red bell pepper to the pot and sauté until softened.

  3. Stir in black beans, diced tomatoes, corn kernels, and taco seasoning. Cook for another 5 minutes.

  4. Sprinkle shredded cheddar cheese on top of the mixture and let it melt.

  5. Finally, sprinkle crushed tortilla chips over the cheese layer.

  6. Cover the pot and cook on low heat for 10 minutes, or until cheese is fully melted and bubbly.

  7. Serve hot with optional toppings like sour cream, diced avocado, and chopped cilantro.
