Serves:
Ingredients
- 1.5 kg turkey
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground turmeric
- 1 cup plain yogurt
- 1 cup coconut milk
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh coriander leaves, for garnish
- For the Chapatis:
- 2 cups whole wheat flour
- 1 tsp salt
- 1 cup warm water
- Vegetable oil, for cooking
Instructions
-
Preheat the oven to 180°C (350°F).
-
In a large oven-safe skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic and cook until softened.
-
In a small bowl, mix together the curry powder, ground cumin, ground coriander, and ground turmeric. Add the spice mixture to the skillet and cook for another minute.
-
Add the turkey pieces to the skillet and cook until browned on all sides.
-
In a separate bowl, whisk together the plain yogurt, coconut milk, lemon juice, salt, and pepper. Pour the mixture over the turkey in the skillet.
-
Cover the skillet with aluminum foil and transfer to the preheated oven. Cook for about 2 hours or until the turkey is cooked through and tender.
-
While the turkey is cooking, prepare the chapatis. In a large mixing bowl, combine the whole wheat flour and salt. Gradually add warm water and knead until the dough is soft and pliable.
-
Divide the dough into small balls and roll each ball into a thin circle.
-
Heat a skillet over medium heat and lightly brush it with vegetable oil. Cook each chapati for about 1-2 minutes on each side until lightly browned.
-
Serve the Coronation Turkey on a bed of chapatis and garnish with fresh coriander leaves.
