How To Make Coronation Chicken Scones

- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup unsalted butter, cold and cubed
- 1/2 cup milk
- 1 cup cooked chicken, shredded
- 1/4 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 tbsp curry powder
- 1/2 tsp turmeric
- 1/4 cup raisins
- 1/4 cup chopped almonds
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, whisk together the flour, baking powder, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.

Gradually pour in the milk, mixing until the dough comes together. Turn the dough out onto a floured surface and gently knead it a few times.

Roll out the dough to about 1/2 inch thickness. Use a round cookie cutter or glass to cut out scones and place them on a baking sheet.

Bake for 12-15 minutes or until golden brown.

In a separate bowl, combine the cooked chicken, mayonnaise, Greek yogurt, curry powder, turmeric, raisins, and almonds.

Split the scones in half and spoon the coronation chicken mixture onto the bottom halves. Top with fresh cilantro and place the other half of the scone on top.
