How To Make Coronation Pies

Ingredients

  • 1 sheet of puff pastry
  • 2 cups of cooked chicken, shredded
  • 1/2 cup of mayonnaise
  • 1/4 cup of Greek yogurt
  • 2 tablespoons of mango chutney
  • 1 tablespoon of curry powder
  • 1/4 cup of raisins
  • 1/4 cup of chopped almonds
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Roll out the puff pastry and cut it into 4 equal squares.

  3. In a bowl, combine the shredded chicken, mayonnaise, Greek yogurt, mango chutney, curry powder, raisins, chopped almonds, salt, and pepper. Mix well.

  4. Place a spoonful of the chicken mixture onto each puff pastry square, leaving a border around the edges.

  5. Fold the corners of the pastry squares over the filling to create a triangle shape. Press the edges together to seal.

  6. Brush the tops of the pies with the beaten egg wash.

  7. Place the pies on a baking sheet lined with parchment paper and bake for 25 minutes, or until the pastry is golden brown and crispy.

  8. Serve the Coronation Pies hot and enjoy!
