Cooking: 30 minutes
Total: 50 minutes

Serves:

Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tablespoons mango chutney
  • 1 tablespoon curry powder
  • 1/4 cup raisins
  • 1/4 cup sliced almonds
  • Salt and pepper to taste
  • 1 package ready-made pie crusts (2 sheets)
  • 1 egg, beaten (for egg wash)
  • Sesame seeds (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large mixing bowl, combine the shredded chicken, mayonnaise, Greek yogurt, mango chutney, curry powder, raisins, and sliced almonds. Season with salt and pepper to taste. Mix well to combine.

  3. Roll out the pie crusts on a floured surface and cut out circles using a round cookie cutter or a small plate as a guide.

  4. Spoon a generous amount of the coronation chicken mixture onto one half of each pie crust circle, leaving a border around the edges. Fold the other half of the circle over the filling to form a half-moon shape. Press the edges together and crimp with a fork to seal.

  5. Place the pasties on a baking sheet lined with parchment paper. Brush the tops with the beaten egg and sprinkle with sesame seeds.

  6. Bake in the preheated oven for about 25-30 minutes, or until the pasties are golden brown and crisp.

  7. Serve the coronation chicken pasties hot or at room temperature.
