Serves:
Ingredients
- 2 cups cooked chicken, shredded
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 2 tablespoons mango chutney
- 1 tablespoon curry powder
- 1/4 cup raisins
- 1/4 cup sliced almonds
- Salt and pepper to taste
- 1 package ready-made pie crusts (2 sheets)
- 1 egg, beaten (for egg wash)
- Sesame seeds (for garnish)
Instructions
-
Preheat the oven to 375°F (190°C).
-
In a large mixing bowl, combine the shredded chicken, mayonnaise, Greek yogurt, mango chutney, curry powder, raisins, and sliced almonds. Season with salt and pepper to taste. Mix well to combine.
-
Roll out the pie crusts on a floured surface and cut out circles using a round cookie cutter or a small plate as a guide.
-
Spoon a generous amount of the coronation chicken mixture onto one half of each pie crust circle, leaving a border around the edges. Fold the other half of the circle over the filling to form a half-moon shape. Press the edges together and crimp with a fork to seal.
-
Place the pasties on a baking sheet lined with parchment paper. Brush the tops with the beaten egg and sprinkle with sesame seeds.
-
Bake in the preheated oven for about 25-30 minutes, or until the pasties are golden brown and crisp.
-
Serve the coronation chicken pasties hot or at room temperature.
