How To Make Chicken Teriyaki Skewers with Griddled Spring Onions

Ingredients

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/4 cup (60ml) soy sauce
  • 2 tablespoons (30ml) honey
  • 1 tablespoon (15ml) rice vinegar
  • 1 tablespoon (15ml) sesame oil
  • 2 cloves of garlic, minced
  • 1 teaspoon (5g) grated ginger
  • 1/4 teaspoon (1g) black pepper
  • 4 spring onions, trimmed
  • 1 tablespoon (15ml) vegetable oil
  • Sesame seeds, for garnish
  • Green onions, sliced, for garnish

Instructions

  1. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and black pepper.

  2. Thread the chicken pieces onto skewers and place them in a shallow dish. Pour the marinade over the chicken, making sure they are well coated. Let it marinate for at least 10 minutes, or refrigerate for up to 4 hours.

  3. Preheat a grill or griddle pan over medium heat. Brush the spring onions with vegetable oil and grill them until tender and slightly charred, about 2-3 minutes per side. Remove from the heat and set aside.

  4. Meanwhile, heat a grill or grill pan over medium-high heat. Cook the chicken skewers for about 5-7 minutes per side, or until cooked through and slightly charred.

  5. Remove the chicken skewers from the heat and let them rest for a few minutes. Sprinkle with sesame seeds and sliced green onions.

  6. Serve the chicken teriyaki skewers with griddled spring onions and enjoy!
