Ingredients

  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced into rounds
  • 1 red onion, cut into chunks
  • 8 cherry tomatoes
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Skewers, soaked in water for 30 minutes

Instructions

  1. Preheat a griddle pan or outdoor grill to medium heat.

  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, garlic powder, salt, and pepper to make the marinade.

  3. Thread the vegetables onto the skewers, alternating between the different veggies.

  4. Brush the marinade over the vegetable skewers, making sure to coat them evenly.

  5. Grill the vegetable skewers for 8-10 minutes, turning occasionally, until the vegetables are tender and lightly charred.

  6. Remove from the grill and let cool slightly before serving.

  7. Serve the griddled glazed vegetable kebabs as an appetizer or as a side dish with your favorite main course.
