How To Make Lamb Souvlaki

Ingredients
- 1.5 lbs lamb, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 cloves of garlic, minced
- 2 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup plain yogurt
- 4 pita breads
- 1/2 cucumber, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- Tzatziki sauce for serving
Instructions

In a bowl, mix together the olive oil, garlic, lemon juice, oregano, thyme, salt, and black pepper.

Add the lamb cubes to the marinade and mix well. Let marinate for at least 1 hour, or overnight for best results.

Preheat grill to medium-high heat.

Thread the marinated lamb onto skewers.

Grill the skewers for about 3-4 minutes per side, or until cooked to desired doneness.

While the lamb is grilling, warm the pita breads on the grill or in a toaster.

In a small bowl, mix together the plain yogurt with a dash of salt and pepper.

Assemble the lamb souvlaki by placing a few pieces of grilled lamb onto each warmed pita bread.

Top with cucumber slices, cherry tomatoes, and diced red onion.
