Ingredients

  • 1.5 lbs lamb, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 cloves of garlic, minced
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup plain yogurt
  • 4 pita breads
  • 1/2 cucumber, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • Tzatziki sauce for serving

Instructions

  1. In a bowl, mix together the olive oil, garlic, lemon juice, oregano, thyme, salt, and black pepper.

  2. Add the lamb cubes to the marinade and mix well. Let marinate for at least 1 hour, or overnight for best results.

  3. Preheat grill to medium-high heat.

  4. Thread the marinated lamb onto skewers.

  5. Grill the skewers for about 3-4 minutes per side, or until cooked to desired doneness.

  6. While the lamb is grilling, warm the pita breads on the grill or in a toaster.

  7. In a small bowl, mix together the plain yogurt with a dash of salt and pepper.

  8. Assemble the lamb souvlaki by placing a few pieces of grilled lamb onto each warmed pita bread.

  9. Top with cucumber slices, cherry tomatoes, and diced red onion.

  10. Serve with a dollop of tzatziki sauce and enjoy!
