How To Make Red Pepper Linguine

Ingredients
- 8 ounces linguine
- 2 red bell peppers
- 2 tablespoons olive oil
- 2 cloves of garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Chopped fresh basil, for garnish
Instructions

Cook the linguine according to package instructions until al dente. Drain and set aside.

Roast the red bell peppers over an open flame or broil in the oven until the skin is charred and blistered. Place the peppers in a bowl, cover with a plate or foil, and let them steam for about 10 minutes. Peel off the charred skin, remove the seeds and stem, and chop the peppers into small pieces.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and cook for 1 minute until fragrant.

Add the chopped red peppers to the skillet and cook for another 3-4 minutes, stirring occasionally.

Add the cooked linguine to the skillet and toss to coat the pasta in the pepper mixture. Cook for an additional 2-3 minutes until heated through.

Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.

Serve the red pepper linguine garnished with chopped fresh basil.
