  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a shallow bowl, mix together the chopped pistachios, breadcrumbs, Parmesan cheese, garlic powder, salt, and black pepper.

  3. Dip each chicken breast into the beaten eggs, then coat evenly with the pistachio mixture, pressing gently to adhere.
