Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup of shelled pistachios
  • 2 tangerines, zested
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat oven to 400°F and coat a baking dish with cooking spray.

  2. Crush the pistachios in a bowl and mix in the tangerine zest.

  3. Season the chicken with salt and pepper, then dredge in flour, shaking off excess.

  4. Dip each chicken breast into the beaten eggs, then into the pistachio mixture, pressing firmly to coat.

  5. Transfer chicken to the prepared baking dish and spray the top of each breast with cooking spray.

  6. Bake for 20-25 minutes or until the internal temperature reaches 165°F.

  7. Let rest for 5 minutes before serving.
