  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup unsweetened applesauce
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. In a separate large bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined.

  4. Gradually add the dry ingredients to the butter mixture, alternating with the applesauce. Mix until just combined. Fold in the chopped walnuts, if using.

  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  6. Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

  7. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely before serving.
