This classic Creole dish is known for its robust flavors and enticing aroma. With a combination of meats, seafood, vegetables, and rice, Jambalaya is a hearty one-pot meal that will transport you to the soulful streets of New Orleans.
Ingredients:
- 1 pound of chicken, cut into pieces
- 1 pound of smoked sausage, sliced
- 1 pound of shrimp, peeled and deveined
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves of garlic, minced
- 2 cups of long-grain rice
- 1 can of diced tomatoes, undrained
- 3 cups of chicken broth
- 2 tablespoons of Cajun seasoning
- 1 teaspoon of dried thyme
- 1 teaspoon of paprika
- 1 bay leaf
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
- Heat a large pot or Dutch oven over medium-high heat and brown the chicken pieces until cooked through. Remove and set aside.
- In the same pot, add the sliced sausage and cook until nicely browned. Once done, remove and set aside with the chicken.
- Sauté the onion, bell pepper, celery, and garlic in the remaining drippings until they turn tender and aromatic. Adjust the heat to medium if needed.
- Add the rice and stir it around to coat it in the flavorful mixture. Toast the rice for a minute or two until it becomes slightly translucent.
- Pour in the diced tomatoes, chicken broth, Cajun seasoning, thyme, paprika, bay leaf, and season with salt and pepper. Give everything a good stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, or until the rice is tender and has absorbed the liquid.
- Once the rice is cooked, add back the cooked chicken and sausage into the pot. Gently fold in the shrimp and cover again. Cook for an additional 5 minutes or until the shrimp turns pink and opaque.
- Remove the pot from the heat and let it rest for a few minutes before serving. The flavors will meld together beautifully during this time.
- Garnish with freshly chopped parsley and enjoy your homemade Jambalaya!
