How To Make Spicy Cajun Chicken Quinoa

Ingredients
- 4 chicken breasts
- 1 cup quinoa
- 2 cups chicken broth
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 yellow onion, diced
- Fresh parsley for garnish
Instructions

In a large bowl, mix together Cajun seasoning, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.

Season the chicken breasts with the spice mixture on both sides.

In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 6-8 minutes per side until cooked through. Remove from skillet and set aside.

In the same skillet, add the bell peppers and onion, sauté until they become slightly softened, about 5 minutes.

Meanwhile, rinse quinoa under cold water. In a separate saucepan, bring chicken broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.

Slice the cooked chicken breasts into strips.

Add the cooked quinoa and sliced chicken to the skillet with the sautéed bell peppers and onion. Mix well to combine and heat for an additional 2-3 minutes.
