How To Make Tarragon, Mushroom & Sausage Frittata

Ingredients
- 8 large eggs
- 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/2 lb sausage, casing removed and crumbled
- 1 cup sliced mushrooms
- 1/4 cup chopped fresh tarragon leaves
- 1 cup shredded cheddar cheese
Instructions

Preheat the oven to 375°F (190°C).

In a medium bowl, whisk together the eggs, milk, salt, and black pepper.

Heat the olive oil in a large oven-safe skillet over medium heat. Add the sausage and cook until browned, breaking it up with a spoon.

Add the mushrooms to the skillet and sauté until they release their moisture and start to brown.

Stir in the tarragon and pour the egg mixture over the sausage and mushrooms.

Sprinkle the shredded cheddar cheese evenly over the top.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and the cheese is melted and lightly browned.

Remove from the oven and let it cool for a few minutes before slicing and serving.
