Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tsp instant yeast
  • 1/2 tsp salt
  • 1/2 cup warm water
  • 2 tbsp olive oil
  • 1 cup mixed dried fruits (such as raisins, cranberries, and chopped apricots)
  • 1/4 cup honey
  • 1/4 cup slivered almonds
  • 1/4 cup powdered sugar, for dusting

Instructions

  1. In a large mixing bowl, combine the flour, sugar, yeast, and salt.

  2. Gradually add in the warm water and olive oil, mixing well until a dough forms.

  3. Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.

  4. Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for 1 hour, or until doubled in size.

  5. Preheat the oven to 425°F (220°C).

  6. Punch down the risen dough, then roll it out into a large rectangle on a greased baking sheet.

  7. Scatter the mixed dried fruits evenly over the dough, pressing them gently into the surface.

  8. Drizzle the honey over the top and sprinkle with slivered almonds.

  9. Bake in the preheated oven for 20-25 minutes, until the focaccia is golden brown and cooked through.

  10. Remove from the oven and let cool slightly before dusting with powdered sugar.

  11. Slice and serve warm.
