Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups diced ripe mangoes
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan with butter or cooking spray.

  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.

  3. In a large bowl, cream together the melted butter and sugar until well combined. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the diced mangoes and chopped walnuts, if using.

  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.

  6. Bake for 50-55 minutes, or until a toothpick inserted into the center of the bread comes out clean.

  7. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
