Ingredients

  • 8 slices of bread
  • 4 tbsp mango chutney
  • 2 cups shredded cheese (cheddar or mozzarella)
  • Butter, for spreading

Instructions

  1. Start by preheating the campfire or grill.

  2. Spread butter on one side of each slice of bread.

  3. Place 4 slices of bread, buttered side down, on a clean surface.

  4. Spread 1 tablespoon of mango chutney on the non-buttered side of each slice of bread.

  5. Sprinkle shredded cheese evenly over the mango chutney on each slice.

  6. Top with the remaining 4 slices of bread, buttered side up.

  7. Place the sandwich in a campfire pie iron or wrap in foil.

  8. Cook the sandwich over the campfire or grill for about 5 minutes on each side, or until the bread is toasted and the cheese is melted.

  9. Remove from heat and let cool slightly before serving.

  10. Cut each sandwich in half diagonally and serve hot.
