  • 1/4 cup shredded cheddar cheese
  • 2 tbsp chopped fresh herbs (such as parsley, basil, or chives)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

  3. Stir in the chopped spinach, diced bell peppers, diced tomatoes, shredded cheddar cheese, and chopped fresh herbs.

  4. Heat a non-stick skillet over medium heat and pour in the egg mixture.

  5. Cook the omelette for about 5 minutes, until the edges are set but the center is still slightly runny.

  6. Transfer the skillet to the preheated oven and bake for 8-10 minutes, until the omelette is puffed up and golden brown.
