  • 1/4 cup diced red bell peppers
  • 1/4 cup diced onions
  • 1/4 cup diced tomatoes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon vegetable oil

Instructions

  1. In a large bowl, whisk the eggs until well beaten.

  2. Add the shredded cheese, diced green chilies, red bell peppers, onions, tomatoes, salt, black pepper, and cilantro to the eggs. Mix well.

  3. Heat the vegetable oil in a non-stick skillet over medium heat.

  4. Pour the egg mixture into the skillet and spread it evenly.

  5. Cook for about 3-4 minutes, or until the edges are set and the bottom is golden brown.

  6. Carefully flip the omelette using a spatula and cook for an additional 2-3 minutes, or until the other side is golden brown and the cheese is melted.

  7. Remove the omelette from the skillet and transfer it to a serving plate.

  8. Slice the omelette into wedges and serve hot.
