Ingredients
- 6 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup chopped spinach
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1/4 cup grated Parmesan cheese
Instructions

Preheat the oven to 350°F (175°C).

In a large bowl, whisk together the eggs, milk, salt, and black pepper.

Heat olive oil in an oven-safe skillet over medium heat. Add the spinach, red bell pepper, and green bell pepper. Cook until the vegetables are wilted, about 5 minutes.

Pour the egg mixture over the cooked vegetables in the skillet. Sprinkle grated Parmesan cheese on top.

Transfer the skillet to the preheated oven and bake for 10 minutes, or until the eggs are set and the cheese is melted and lightly browned.
