How To Make Farmers Market Restaurant’s Veggie Omelette
A healthy and delicious veggie omelette loaded with fresh farmers market vegetables and flavorful herbs.

Ingredients
- 8 eggs
- 1/2 cup chopped spinach
- 1/2 cup chopped mushrooms
- 1/4 cup diced onions
- 1/4 cup diced bell peppers
- 1/4 cup shredded cheddar cheese
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions

Heat olive oil in a non-stick skillet over medium-high heat.

Add onions and bell peppers and sauté for 2 minutes.

Add mushrooms and spinach and sauté for 3 minutes.

In a mixing bowl, whisk eggs with salt and pepper.

Pour the egg mixture over the veggies in the skillet and let it cook for 5-7 minutes or until the edges start to set.

Sprinkle shredded cheddar cheese on top of the omelette.

Using a spatula, fold the omelette in half and cook for another 2-3 minutes.
